In a large pot brown your ground beef, drain any fat …..

Add to ground beef your chopped onion, green pepper and minced garlic, sauté until veggies are tender…….

Next add in your black pepper, chili powder, black beans, diced tomatoes, diced tomatoes with green chilis, refried beans and frozen corn, bring to a boil, then reduce heat and cook on low heat, stirring occasionally, for 30 minutes, uncovered……

Meanwhile combine your corn muffin mix, eggs, milk and shredded cheddar cheese in a large bowl, stir together (batter will be slightly lumpy, that’s ok)….. 🙂 Set bowl to the side …….If batter looks too dry add a little bit more of milk, then stir until combined…….

Pour cooked ground beef mixture into a large baking pan…..

Gently spoon corn muffin mixture all over ground beef,spreading mix evenly to fully cover ground beef as much as you can ………

Place baking pan into a preheated 400 degree oven and bake for 45 minutes to 1 hour, or until golden brown on top ……

Let cool for about 20 minutes, cut, serve and enjoy 😉!!!
