This recipe was quick, easy, and delicious! I think next time I’ll experiment with sausage instead of ground beef.
Cooking Instructions

Preheat oven to 400 degrees

Cook ground beef & add 1/2 tbs of garlic, onion, salt & pepper while cooking, drain the oil.

Add tomato paste or tomato and mix. Cook for about 3 minutes, add a little water if needed.

Add rice and mix & toast for about another 5 minutes. Then add remaining 1/2 tbs of salt, pepper, onion, garlic. Use enough seasoning to ensure flavor, I used GOYA all-purpose seasoning

Add chicken broth and water or just water. If you are using just water, add more seasoning. Heat to boil then cover & simmer for about 7 minutes.

Gut and clean out bell peppers. I placed mine in boiling water for about 5 minutes to soften it up. (Optional) Enjoy a quick snack of raw bell pepper tops with ranch 😋

Add remaining bell pepper tops to your cooking rice. Once it’s ready fill your peppers

Add your choice of cheese on top, I used mozzarella and mild cheddar cheese. Cook for 20 minutes in the oven, until cheese is melted and peppers are tender
