Peanut butter flapjacks

Very quick and easy recipe from a friend who brought these to a mini Powerlifting meet at our gym. Tasty, energy-dense, great fuel! Her recipe called for honey, but I found this to be a bit too rich, so have swapped for agave. Makes 12 generous pieces.

I started making these when my daughter was first born as we had absolutely no schedule and often needed a quick source of energy to see us through. Especially in the middle of the night!I took huge inspiration from Freya’s recipe https://cookpad.wasmer.app/us/recipes/4728827-flapjacks but tweaked it over time trying different ingredients. Here it is in its purest form. Just 4 ingredients!#vegan and free of refined sugar. Sam Meadley -

Full disclosure: as a new mama I've been making cookies intended to boost nutrients passed on to my lil man, but it's been way too hot to bake lately so I've modified the "energy bite" recipe idea to create a no bake version of my cookies. Good news is, these are tasty and good for you no matter who you are! Use agave nectar instead of honey for a full vegan version to boot! StephieCanCook -

This recipe is so quick, simple and makes an awesome cookie. It's also an easy one for young kids to help out with. You can easily add in some chocolate chips or vanilla extract or a pinch of cinnamon for different flavor combinations. You could also substitute a different nut butter for the peanut butter.
