Ingredients

  1. 200 gGreen beans
  2. 100g, cubed Feta cheese
  3. 50g, chopped Almonds
  4. 1 handfulfresh mint leaves
  5. 1handful, Fresh parsley leaves
  6. 2cloves, minced Garlic
  7. 2, chopped Preserved lemon
  8. 1 teaspoonChili flakes
  9. 2 tablespoonsLemon juice
  10. 3 tablespoonsOlive oil
  11. to taste Salt and pepper

Cooking Instructions

    Blanch green beans until tender for about 2 minutes, then place them into an icebath to stop the cooking process.

    Pinch them at the tip and use the natural seam to tear the green beans apart.

  3. 3

    In a pan, heat olive oil over medium low heat and infuse with garlic, preserved lemon, and chili flakes until the garlic is soft and not brown.

    Combine green beans, feta, almonds, mint, and parsley in a bowl.

  5. 5

    Drizzle with infused oil and lemon juice, then toss.

  6. 6

    Season with salt and pepper to taste.
