Thai Green Bean Salad

Ingredients

4 servings
  1. 1onion, chopped to bite-size
  2. 1red bell pepper, chopped to bite-size
  3. 1/4 cupsoy sauce
  4. 2 clovesgarlic, minced or pressed
  5. 1 tbsprice vinegar
  6. 1lime, zest and juice
  7. 1 tbsplight brown sugar
  8. 1/8 tspsriracha sauce
  9. 1 lbfresh green beans
  10. 2roma tomatoes, chopped
  11. 1/4 cupfresh parsley, chopped
  12. 1/4 cupfresh basil, chopped
  13. 2 sprigsfresh mint, chopped
  14. to tasteblack pepper
  15. 1/4 cupdry roasted peanuts, chopped
  16. 1green onion, sliced for garnish

Cooking Instructions

  1. 1

    Saute onion and bell pepper (in cooking spray for 0 points, or whatever you prefer butter, oil, etc.) to desired firmness. If you like raw onions, like me, this step is unnecessary, but if you're cooking for someone who is sensitive to raw onion, like my husband, you will want to make sure you cook them first!

    Whisk the soy sauce, garlic, rice vinegar, lime juice, lime zest, brown sugar, and sriracha.

    Blanch beans in boiling water (cook about 2-3 minutes than transfer to bowl of ice water)

    Drain the beans and mix with onions, peppers, tomatoes, parsley, basil, mint, and black pepper.

    Pour dressing over veggies and mix well. Let sit in refrigerator for no less than 30 minutes. Toss with peanuts and green onions just before serving.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
