Had some yellow pear tomatoes from my garden, the last harvest for this season, and I came up with this to use them up. I used can green beans, I used what I had on hand. If you don’t have white beans of any kind, kidney beans or black beans will work too. You do you, use what you have.

Ingredients

2 cupsfresh green beans
1 (15 oz)can white beans drained and rinsed
1 cupcherry or grape tomatoes cut in half
1celery stalk thinly sliced
Dressing creamy vinaigrette
Olive oil
Red or white wine vinegar
Plain yogurt
Kosher salt
See my recipe on creamy vinaigrette to make

Steps

Prep vegetables and beans, stem ends and snapped off, cut into 1 inch pieces for green beans, drain and rinse white beans, cut celery and tomato’s

Add all to a bowl, and make creamy vinaigrette. Add the vinaigrette to the bean mixture. (I didn’t add much dressing to mine, make to taste)

Serve right away or cover and refrigerate up to 1 day.
