Cooking Instructions

Put the rice flour and tofu into a plastic bag and crumble from the outside.

When it becomes small chunks, remove them from the bag to the cooking sheet.

Mix the powder for coloring into the dough. Adjust it to be pale in the state of the dough because the color turns deeper after boiled.

Add a little water to the dough and mix it. Repeat until it becomes the appropriate softness to work with. Be careful not to add too much water.

You can make the favorite color of doughs. (It's morphin time!)

Extend the dough to about 3 mm thickness, and cut out with the favorite mold. You can also make your favorite shape freely without using the mold.

Collect the remaining dough and make balls as you like. If it is too big or too thick, it takes more time to be cooked.

Put dumplings into the boiled water and wait for 1-2 minutes.

Chill them in the iced water to finish.

Decorate dumplings as you like with fruits, sweet bean paste, and syrup.

This is my mum's way of making these.Take a tiny bit of the food colouring on the tip of a toothpick. Adjust the colour by adding it little by little to create a very pale pink colour. Before cooking the rice, stir well to distribute the colouring evenly. More sugar helps preserve the moistness of the sakura-mochi. Chill the adzuki bean paste in the fridge. It's easier to handle or shape when chilled. Measure exact tablespoons of adzuki bean paste for quick measuring and suitable amounts. Scoop the bean paste with a spoon, wrap it in the mochi rice, then wrap each in a cherry leaf. This should be done in one go. Store the leftover adzuki bean paste in a plastic bag in the freezer; flatten it and score with lines to separate into tablespoon portions. Freeze it until required. I made a prettier version of a recipe I uploaded previously,If you use 50 g of shiratamako (glutinous rice flour with a little katakuriko potato starch flour added) and 10 g of joshinko (regular rice flour) instead of 60 g of shiratamako, the dough will be chewier. If you prefer a tender texture, make the dough with shiratamako only.I recommend using silken tofu. I have learned how to make sakura mochi, but I didn't have rice flour, domyoji flour, or a cherry blossom leaf...I wanted to make a sakura mochi easily, so I came up with this recipe.-A little amount of the red food colouring is enough to turn the rice pink, so don't add too much. If you add too much, the rice turns red.-A pinch of salt gives the rice a salty kick, and it will taste like the authentic sakura mochi. If you don't have the salted cherry blossom leaf, add little more salt in the rice to adjust the taste. I taste the mixture at the Step 3, and adjust the taste to my liking.
