Green Lentil Falafel

I love experimenting with falafel! Usually they're made with garbanzo beans/chickpeas, but I wanted to see if I could make falafel out of lentils too. They turned out great - and have a different flavor than regular chickpea falafel! Here's how I made them - feel free to mix up the spices with other flavors you like. This makes about 12 small falafels.

Cooking Instructions
- 1
Soak lentils overnight and drain. (Note: Do not use cooked lentils!! they will fall apart when frying)
- 2
Combine all the ingredients for falafel (except cooking oil of course) in a food processor. Work in batches if needed.
- 3
Process until the lentils are chopped into a grainy mixture. You don't want it to be come a paste.
- 4
Form into balls using about 2 Tbsp of the lentil mix each. (it helps to wet your hands a little to prevent the mixture from sticking). If they are falling apart, add more flour to the mixture.
- 5
Heat enough oil for frying in a frying pot. One the temperature is hot, fry the falafel in batches. When one side is golden brown turn over and fry the other side.
- 6
When all sides are golden remove from oil and let drain on a rack or on paper towels.
- 7
Mix together the yoghurt dip ingredients if using that. Serve and enjoy with the yogurt dip!

Baked Falafel Baked Falafel
Falafel is made from chickpeas or fava beans. You can add flour to the mixture to help it hold together during cooking, but too much flour can ruin the texture and make the falafel too bready. Baking soda softens the chickpeas so they cook more easily and evenly. It's important to let the mixture rest in the refrigerator for 30 minutes so it binds together better. Falafel Chickpea Croquettes Falafel Chickpea Croquettes
I learned a falafel recipe from an Israeli person, but the amounts of the ingredients were roughly measured. So I made this recipe after I measured the ingredients properly myself. I replaced coriander with parsley as I don't really like coriander.By using uncooked chickpeas, you can enjoy the fluffy texture of deep-fried falafels.I seasoned the chickpea mixture really well with a generous amount of cumin powder. You can replace the parsley with coriander or dill. For 12. Recipe by Kuminchan cookpad.japan
