Banana Bread (Nanny Mac's)

This is the first recipe of many that my Nan taught me. It's lovely as a breakfast item warmed with a little butter, or served as a dessert with vanilla ice cream.
You can add nuts, raisins, and/or chocolate chips to jazz it up, but I prefer the plain one.
Cut into 1 inch slices.

Ingredients

  1. 4ripe bananas
  2. 1beaten egg
  3. 1/2 cupmelted butter
  4. 1 teaspoonbaking soda
  5. 1/4 teaspooncinnamon
  6. 1/4 teaspoonnutmeg
  7. 1 1/2 cupall purpose flour
  8. 1vanilla pod
  9. 2/3 cupsugar
  10. 1/2 teaspoonkosher salt

    Preheat oven to 170°C.

    Mash bananas in a large bowl. Over ripe (very brown) bananas work best.

    Add melted butter to bananas. Mix well.

    Add 2/3 cup of sugar and vanilla to egg and banana mixture, cream together.

    Mix in baking soda, cinnamon, salt and nutmeg.

    Using a spatula or wooden spoon fold in flour until fully mixed.

    Grease loaf tins.

    Divide mixture into two small loaf tins (18 x 9 x 6.5 cm)

    Place tins in oven and bake for 40 minutes. Test to make sure it's finished by poking a toothpick into the center of the loaf, if it comes out clean, it's finished!
