Vicky@Jacks Free-From Cookbook @allergyfriendlycook
Hope you enjoy it @PeacefulJourney! Note - if using a dairy milk you'll need to adjust the milk quantity as you'll need less
Cooking Instructions
- 1
Mix the sugar and cornflour in a bowl with some of the milk to make a watery paste
- 2
Heat the rest of the milk in a pan, simmer, then pour in the starch/sugar/milk mix and bring to the boil
- 3
Take off the heat and stir in the banana, vanilla and colouring
- 4
Pour into a glass dish until cooled, then refrigerate until set
- 5
For a layer pudding, place some vegan vanilla cookies on the bottom of the dish, cover with a layer of sliced banana then top with half of the pudding mixture. Repeat the cookie, banana, pudding layers and refrigerate until set. Quantities are around 150g cookies and 2 medium bananas

Lillian's Banana Pudding Lillian's Banana Pudding
This classic dessert brings on happy childhood memories from the 1950s-60s. Our housekeeper/babysitter, Lillian, made the most delicious banana puddings and lemon meringue pies for us. I think they were used as bribes to get us to behave. (The 6 of us were nicknamed "the Thundering Herd".) Soooooo much better than using instant pudding! You'll immediately taste the difference. Dee-Dee made this one for us, and it was outstanding; just like Lillian's! Maggie Conlon -

Rum & Chocolate Banana Pudding Rum & Chocolate Banana Pudding
I was making mousse, but then I realized that I had forgotten to add whipped cream, and I ended up with this.It tastes like chocolate truffles I had in Hokkaido. If you add too much milk in one go when mixing the cocoa and milk, it will get lumpy, so just add a little at a time.Mind you don't burn it when you are melting the chocolate. If possible, use a double boiler. The rum is quite strong, so if you are not so keen on alcohol, reduce the amount and use more milk instead. Recipe by La Land cookpad.japan
