Cooking Instructions

for the batter::

mix all the dry ingredients together in a bowl.add the hot oil.set aside

for the filling

mix all the ingredients well in a bowl.set aside

for the chillies:

slit each chili lengthwise & remove the seeds without removing the tops & without slitting it on the other side

be careful while doing this.wear gloves.

heat the oil in a deep bottomed frying pan or a deep fryer if u have it

fil the chillies with a handful of the potato filling each such that its also coated halfway with the fillin on the outer skin too

add water in parts to the dry batter & mix well to form a smooth flowin batter a little thinner than a pancake mix

when the oil is hot(check by addin a drop of batter,it shud immediately rise to the top) dip each chilli in the batter & drop it in oil & fry til brown 2 at a time only

remove with a slotted spoon & drain it on paper napkins to remove exces oil

serve hot with ketchup or tamarind sauce

note:u can use the same batter to make vegetable fritters too.slice veggies(potatoes,onions,capsicum,eggplant,cucumber),dip in batter & deep fry
