Cooking Instructions

to make dosa batter:in a bowl rice,dal & fenugreek seeds & wash until the water runs clear

now add water to the rice mix to fill 3 quarters of the bowl.cover & let it soak overnite or atleast 5 hrs

remove the water from the rice mix after the soakin period.the rice grain should break easily in your hand after soaking.

grind the mix in a grinder while adding abt 1 tablespoon water at intervals to a smooth paste.no granules should b present wen u feel it in ur hand.dont add much water,it should flow bt it should b thicker than a pancake batter.

if using a smal grinder,do it in batches

put the batter in a large bowl,add the salt,mix wel,then cover it & let it rise undisturbed overnite or til it doubles atleast

if u dont want to make it as soon as it rises refrigerate it after mixin the mixture wel.dont let it rise more coz it cn turn sour den!!!

to make dosas:

dilute the batter to resemble pancake mix,so that it can flow smoothly

heat a non stick skillet wel,a drop of water should sizzle & evaporate on it.this is important

pour a ladleful of the batter on the skillet & quicly spread it in a circular spiral motion

turn the heat to high & cook the dosa until it colous golden on the lower side.apply a little oil on it then flip it & cook the other side

remove from skillet & serve immediately.repeat with the rest of the batter

tip:wipe the skillet with a clean cloth before pouring the batter for the next dosa
