I recently mentioned on the dinner thread that I'd had this and it sparked some interest. This is just an old-fashioned way of cooking cabbage or any other root vegetable really. I'm not sure if it's only typical in Scotland where I live but if it is, it shouldn't be! Enjoy!

Ingredients

30 mins
4 servings
  1. 1 headcabbage, chopped
  2. 1enough water to cover the cabbage
  3. 1milk, any kind you use - coconut milk, rice milk, whole dairy
  4. 1 pincheach salt, pepper & ground nutmeg to taste
  5. 1 tbspsunflower spread/butter

Cooking Instructions

30 mins
  1. 1

    Put the chopped cabbage into a large pan of boiling water. Simmer for 20 minutes, then drain

  2. 2

    Add milk to the saucepan, enough to cover the cabbage. Let it stew in the milk until it's reduced to just a coating on the cabbage - don't let the milk boil

  3. 3

    When cooked through, season with salt, pepper and nutmeg to taste and a tablespoon of butter/sunflower spread melted through

  4. 4

    Other vegetables cooked in milk this way are just as tasty such as carrots and cauliflower

  5. 5

    My grannie and mother both always cooked their cabbage this way and I do too
