Ingredients

  1. 5 lbChicken thighs bone in skin on!
  2. 4 cupSweet baby rays original BBQ sauce or your favorite.
  3. BBQ Dry Rub
  4. 2 tbspgarlic powered
  5. 2 tbsponion powered
  6. 1 tbspsea salt
  7. 2 tbspfresh ground black pepper
  8. 2 tbspsmoked paprika
  9. 2 tbspthyme
  10. 2 tbsprosemary
  11. 2 tbspparsley
  12. 2 tbsporange zest
  13. 2 tbspsage

    Best results come from using a charcoal grill with real lump charcoal! Fire up the grill(pile charcoal in pyramid in middle of grill apply charcoal lighter fluid wait 30 mins til the charcoal is ashed over spread evenly add wood chip for smokey favor(soaked in water for 20 mins then drain well before adding) place grilling grate and its ready).

    prepare chicken as you wait for charcoal to become ashed over. clean the grill before add wood chip as it will be very smokey. you want to add wood chip right before placing chicken on grill to cook!

    mix all dry ingredients together sit a side

    Remove chicken(thighs are the juiciest and most flavorful part of the chicken!) from package raise chicken with cold water leave skin on it will protect the chicken from drying out place on paper towels pat dry place on a plate or platter. apply dry rub to every inch of chicken(top, bottom, sides, ends)

    You can use skin on bone in breasts if you perfer white meat just use care when to not burn or over cook them!

    When grill is ready place chicken on grill CLOSE lid on grill cook 5 ro 7 mins on each side. Use an instant read thermometer insert into the thickest part of chicken close to the bone 165 is good and done but dont wait till then when its at 155 ro 160 brush with BBQ sauce to one side than flip over and brush other side then cook on each side after appling BBQ for about 5 min to the point the BBQ sauce starts to caramelize(thickens and darker in color) remove and let side about 5 mins then enjoy!
