Ingredients

  1. 1 lbBeef liver (sliced,deveined,skinned)
  2. 2 largeVidalia onions (or 1 large white onion)
  3. 4 sliceBacon
  4. 1/4 cupLight brown sugar
  5. 1 tspSoy sauce
  6. 1Non-stick cooking spray
  7. 1Salt
  8. 1Ground black pepper
  9. 1All-purpose flour
  10. 4 tbspButter (divided)

Cooking Instructions

    Preheat oven to 325°F

  2. 2

    Cut bacon strips into 3 pieces each and slice onions

  3. 3

    Fry bacon and 1 tablespoon of butter in large fry pan over medium heat until just before crisp

  4. 4

    Remove bacon pieces to plate or paper towels

  5. 5

    Add sliced onion and remaining 3 tablespoons of butter to bacon grease and sautee until soft and transparent (about 5 to 7 minutes)

    Spray roasting pan or baking dish with non-stick cooking spray

  7. 7

    Salt and pepper liver slices and dust lightly with flour on both sides

  8. 8

    Arrange liver slices in prepared dish or roasting pan in a single layer (note: if doing 2 pounds of liver stagger second layer, but single layer preferred)

    Arrange bacon pieces over liver

  10. 10

    Carefully pour onion and bacon grease/butter mixture over liver

  11. 11

    Add additional salt and pepper if desired and cover pan/dish with lid or cover tightly with aluminum foil

    Bake in center of oven for 45 minutes at 325°F

    Remove from oven sprinkle with brown sugar and soy sauce, recover and return to oven fo 15 minutes

    Remove from oven and let rest for 5 to 10 minutes

    Enjoy! (suggested sides: mashed potatoes and creamed corn)

I used to love fried liver and onions then I tried this recipe and I haven't made fried liver and onions since! This is so yummy and tender! I had a piece of liver left over once and it made an AMAZING sandwich the next day. Thank you Rick!!!!
