Put oil in a large skillet on med heat

Add garlic and onion and cook till onions are soft, about 10 min

Add cabbage and carrots, and cook till soft, about 15 min

Drain excess water, then add the cooked chicken

Add soy sauce and cook for 5 more min on low till the sauce is absorbed into chicken and veggies

Remove from heat

Chop the veggies and chicken in a food processor until thoroughly mixed and minced

Put the mince mix in a bowl and set aside

Open the spring roll wrappers and cut the square down the middle into two triangles

Scoop 1 tbsp of mince and put along the bottom edge of 1 layer of wrap, leaving a 1/2 in gap at the bottom

Fold the two edge corners over the mince. Dip a finger in water and seal the edges of the triangle as you wrap it towards the top of the triangle. If it's overfull add less minxe

Set aside and repeat until you run out of mince or wrappers

Fry rolls in oil, or air fryer until brown, then set to drain vertically in a bowl with paper towels at the bottom
