I love shrimp

This is very simple and satisfying on a weeknight. You can use shrimp instead of crawfish if you can't find them. Using a cajun spice blend also helps make this fairly simple and quick. The Velveeta is necessary to keep the cheese sauce creamy and emulsified, so don't skip it. If you can't find Velveeta, use american cheese slices. Any shredded cheese can be used from Cheddar to parmasan.
