There are other recipes for carnitas, for example slow cooked in chicken broth. I found that the only way to get that authentic Mexican flavor is to use the manteca "lard". Also DO NOT use American style Coca-Cola, it doesn't have the raw sugar the Mexican Coca-Cola has.

  1. 355 mlbottled Mexican Coca-Cola. Note: American Coca-Cola will
  2. 6 lbbone in pork shoulder or pork butt sliced into 4inch slices
  3. 1sliced up orange with peel
  4. 2cinnamon sticks
  5. 2 1/2 lbManteca "lard"
  6. 1 cupwater
  7. 4dry bay leaves
  8. 1/2 can (7 ounces)sweetend condensed milk
  9. 1 1/2 tbspsea salt
  10. 4whole fresh cloves of garlic

    On your stove top range, bring temperature of lard to 375°F in a large cooking pot or dutch oven.

    Add your slices of pork to the 375°F lard, and allow pork to sear until brown, stirring frequently as to not let the pork stick to the pot.

    Add cinnamon sticks, then add oranges by squeezing juice into cooking pot, and then drop in squeezed oranges peel and all. Cook while stirring often for about 30 minutes.

    Reduce heat to medium, while adding a cup of water to the boiling lard. This will bring down cooking temperature to 230°F. Resume cooking at medium until water evaporates, simmering for about 30 minutes.

    Stir in the bottle of Mexican Coca-Cola, crushed whole cloves of garlic, dry bay leaves, and sea salt. Option for sweet taste: add half can (7 ounces) of sweetened condensed milk. cook for another hour while frequently stirring over medium heat.

    Carefully remove carnitas and place on paper towel. Then carefully cut carnitas into 2 inch cubes.

    In a large skillet over medium heat, fry carnitas frequently turning until crispy to your liking.

    Enjoy with warm tortillas, avocado, cilantro, etc...
