Ingredients

  1. Crust
  2. 2 ozcream cheese
  3. 2eggs
  4. 1/2 tsptaco seasoning
  5. 1 cupcheese (I used Mexican blend)
  6. enchilada filling
  7. 1 1/2 lbground beef (I used ground venison
  8. 3 tbsptaco seasoning
  9. 8 ozRotel tomatoes
  10. 1 1/2 cupenchilada sauce
  11. 1 cupcheese (I used Mexican blend)

Cooking Instructions

20 mins
  1. 1

    preheat oven to 350°

  2. 2

    Mix crust ingredients together and pour into a 9x13 dish sprayed with nonstick spray.

    bake crust for 30-35 minutes until golden brown

  4. 4

    brown hamburger meat and add all remaining enchilada filings except cheese.

  5. 5

    pour enchilada filling over baked crust.

  6. 6

    top with remaining cheese

  7. 7

    bake for an additional 20 minutes put until bubbly.

How thick is the crust? Just curious. I want to make this, but make a much smaller one only 6 inch round pan. Everyone else is having double deckers (homemade), but I want to eat low carb. Is it like 1/2 inch or better yet what size pan is this in? :) Thanks for all the recipe ideas! I really appreciate it.
