I love enchiladas and I love pasta so why not combine the two minus the noodles ! I did half of mine with olives half without since my husband loves them and I hate them LOL

Easy enchilada “lasagna” casserole

I love enchiladas and I love pasta so why not combine the two minus the noodles ! I did half of mine with olives half without since my husband loves them and I hate them LOL

Ingredients

6-8 servings
  1. For the filling :
  2. 1 lbground venison
  3. 1/2 lbground jimmy dean sausage
  4. 1 cantomato soup
  5. 1 packettaco seasoning
  6. 1 candiced tomatoes and green chilies
  7. 1/2onion or whole onion depending on how much you like
  8. 1 tablespoonsugar
  9. For the beans:
  10. 1small can old El Paso refried beans (fat free)
  11. 1/2 teaspoonchicken seasoning
  12. 1/4 teaspoonpepper
  13. 1/4 teaspooncumin
  14. 1/4salt
  15. 1-24 ozpackage small corn tortillas
  16. 2 cupsshredded Mexican cheese divided
  17. 2 cupsmozzarella cheese divided
  18. 1/2 canblack olives (optional)
  19. You can also serve with my avocado crema, Guacamole, salsa or cilantro!

Cooking Instructions

    Heat oven to 375. Cook both meats with all spices and do not drain. Add in diced tomatoes w green chilies and all simmer on low for 20 min. Stir in sugar and 1 cup of each cheese. mix beans and spices up in separate bowl. Drain and dice olives if you wish to incorporate them.

    Now grease up a glass baking dish and start layering; tortillas, beans, meat mixture cheese repeat until none left and top with remaining cheese and olives. Bake covered 25 -30minutes and toss under the broiler for 1-2 minutes to add the speckles
