Cooking Instructions

Salt and pepper chicken. In a non-stick skillet, brown chicken on both sides. Add mushrooms, cook until softened. Remove from heat.

In another skillet heat the canola oil. Add the flour and the garlic. Stirring constantly. Cook until the garlic is slightly brown. About 3 minutes.

Cook pasta, drain, and set aside.

Add in milk and chicken broth, whisking the whole time. Cook until simmering. About 5 minutes.

Add parmesan cheese, and cook until melted. Stirring constantly.

Add spinach. Cook until slightly wilted.

Add chicken, mushrooms, and pasta. Toss these ingredients to make pasta.

This dish happened on the spur of the moment. I had some leftover mascarpone from yesterday's pasta recipe, and decided to turn it into a creamy sauce for some chicken thighs. Spinach was added to round out the dish, and from there it only made sense to add nutmeg for some spicy warmth. With such a dependable combination of flavours, it wasn't surprising that the final result was pretty darned amazing. What was surprising was seeing my daughter double-fisting the spinach and chicken into her mouth. Now that's a rave review! Robert Gonzal -
