Chicken Salad with Cashews

The first time had this yummy Chicken Salad was at a bridal shower for my friend Carolyn in the mid 90's. My friend and Carolyn's Maid of Honor Janeen had this beautiful spread of food that was made perfect for a summer celebration. This Chicken Salad became an instant Favorite of mine and my family. I promise you'll enjoy every morsel of this delicious combination of flavors.

Ingredients

  1. 4 cupsCooked chicken breast
  2. 1 can(small) Mandarin oranges
  3. 1 canpineapple tidbits
  4. 1 Cupsliced red and green grapes
  5. 3/4 Cupcelery
  6. 1/8 cupdiced onion
  7. 1 cupsalted cashews
  8. Dressing
  9. 1/2 Cupplain or peach yogurt
  10. 1/2 Cupmayonnaise
  11. to tasteSalt

Cooking Instructions

    Combine chicken, mandarin oranges, pineapple, grapes, and celery in a large bowl.

    In a separate small bowl combine yogurt and mayonnaise. To make the dressing.

    Fold dressing and with the Chicken mixture in the large bowl.

    Serve chilled, and top with cashews on a crescent Roll, Chibalta bread, or homemade sour dough bread.
