This became an instant favorite the first time I made it. It's one of many recipes I make "by eyeball" -- I don't measure any of the ingredients. So the measurements listed here are good estimates, but feel free to adjust to your personal preference and how it looks/tastes as you're mixing everything together. This makes a big batch to feed a crowd (I share with family); 10-12 generous servings. Equally good eaten from a bowl as on a sandwich.

Ingredients

10-12 servings
  1. 3lbs. cooked chicken breast, chopped (or deli rotisserie chick)
  2. 3celery stalks, finely sliced (or to taste; my sister skips celery altogether)
  3. 2Braeburn apples, diced small (or Honey Crisp apples)
  4. 1large bunch seedless red grapes, sliced in half
  5. 1 bunchgreen onions, sliced
  6. 12 oz.salted cashews, roughly chopped (see Note)
  7. dressing:
  8. 2-1/2 cupsmayonnaise
  9. 4 tablespoonsapple cider vinegar
  10. 1/3 cupdark brown sugar

Steps

    NOTE: This is best eaten the day it's made and the following day. It's still "good" up to 4 days, BUT you'll notice a change in the chicken's texture, which I don't enjoy. I prefer serving it as a sandwich on a large deli croissant (yum!), but we also like it in a bowl as a salad.

    NOTE: Found these Sweet Brown Butter Cashews (on Amazon) that are delicious in this salad! Highly recommend using them!

    I really prefer making this with 2 rotisserie chickens from the grocery's deli for a couple reasons. Perfectly seasoned and cooked (easy), and I get to indulge in a guilty pleasure while prepping the salad: crispy chicken skin!! (Don't judge; it's delicious!) I'll skin the chicken and crisp to perfection in the air fryer while boning and chopping the chicken. I usually prep the chicken the day before I make the salad, mainly because I'm old and tire easily.

    In a large mixing bowl, using a rubber spatula, mix together all the salad dressing ingredients. Peel the apples, core, dice small, and stir into the dressing. This will keep them from discoloring while prepping the rest of the salad.

    Add all ingredients to the large mixing bowl with the salad dressing and apples and mix well with rubber spatula. Store in covered container in refrigerator.

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 8 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). I'm trying to get all my favorite recipes saved here so my family and friends all have easy access to them even after I'm gone. My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.
