Schezwan chutney is a spicy and pungent chutney made with dry red chillies, garlic, shallots and spices. It is a fusion Indo Chinese recipe of a hot chilli chutney. It is a very famous recipe from the Indo Chinese cuisine. You can have it along with paratha, sandwiches, use it as a dip with anything with rice, noodles etc.

Schezwan chutney is a spicy and pungent chutney made with dry red chillies, garlic, shallots and spices. It is a fusion Indo Chinese recipe of a hot chilli chutney. It is a very famous recipe from the Indo Chinese cuisine. You can have it along with paratha, sandwiches, use it as a dip with anything with rice, noodles etc.
Cooking Instructions

Remove the stem and cut the chili from the centre to to remove the seeds comfortably.

Add the chillies to the boiling water. You can cover and cook the chillies for at least 15 to 20 minutes.

Remove the chillies from the water and let them cool down.

Grind the chilli without adding water. Red chilli paste is ready.

Heat the oil and add ginger and garlic. Saute well (don't burn the garlic) cooked till all the raw smell is escaped. Now add chilli paste saute well for 2 minutes.

Add red chilli sauce, soya sauce, white pepper powder, tomato ketchup, vinegar and mix it. Keep stirring continuously and cook for 10 minutes.

Cook well until the oil is released. Add salt and sugar. Cook for 2 minutes.

Now Schezwan Chutney is ready to serve. Cool down the chutney completely before storing.
