It is among the 56 food items (Mahaprasad) offered to Lord Jagganath in the temple of Puri. It is a very simple & healthy recipe providing almost all the nutrients required for a balanced meal.

Cooking Instructions

Wash the chopped vegetables properly.Wash the fried moong dal & soaked it for few mints & then drain the water.

Take 3 tsp cumin seeds & 3 dry red chiies & dry roast them in a fry pan.Grind them into a fine powder.

Cook fried moong dal, chopped vegetables, salt,turmeric powder in a pressure cooker along with 6 cups water for 2 whistles.

Then switch off the flame.Open the cooker when all the steam has been settled.

Pour ghee in a nonstick kadai & add the cumin seeds.Allow the seeds to crackle then add the dry red chillies & bay leaf.

Then add the chopped tomatoes, ginger paste, turmeric powder, salt & mix them well.

Add the cooked dal & vegetables with the roasted masala.Add a bit of water if required.

Cover & cook for another 5 mints.Then switch off the gas & sprinkle the cumin & dry red chilli powder.

Pour some ghee over it.

Serve hot with steamed rice or phulkas.

Shukto is a mishmash of different vegetables often cooked in Bengali household. Bori or dried lentil dumplings are added to this dish. You can prepare them at home or buy them from the stores.
