Add the grated carrots and fold in gently with a spatula.

You can add raisins and nuts if you like.

Grease your pan and bake for 50 minutes at 350°F (180°C).

For the frosting, simply beat the cream cheese with the butter, add the sugar and vanilla until all ingredients are combined.

When your cake is ready, let it cool before adding the frosting. Decorate as you like.
