Mysore pak a traditional Indian melt in mouth sweet recipe,it is v.popular sweet from the state of karnataka,hails from a royal family of mysore,this can be prepared in two different texture, hard &soft,I love this soft texture mysore pak, mom used to be expert in making soft mysore pak,I picked it up from her,this recipe does not require many ingredients, gram flour, sugar, ghee all that it needs..do try this melt in mouth delicacy without second a thought, its that delicious..

Ingredients

  1. 1 cupgram flour/besan
  2. 2 cupssugar
  3. 2 cupsghee(clarified butter)
  4. 3/4 cupwater

Cooking Instructions

    Firstly sift the flour to get rid of the lumps, keep a greased tray ready, mix ghee and gram flour together, whisk well to make sure there are no lumps left

    Now take sugar and water in a thick bottomed deep pan, turn on the flame boil it on medium flame stirring continuously, keep stirring until you get one string consistency,(if you check in between fingers you get one string)now pour in slowly mixture of ghee and flour keep on stirring continuously

    At one point it becomes pale in colour and frothy,and ghee starts to ooze out in the edges, transfer this in to greased tray immediately,let it cool down for 30 minutes..cut in to desired shape, let it cool down further for about 2-3 hours before storing in the container..your melt in mouth soft mysore pak is ready to serve.. enjoy.

    Note:if you don't wish to use 1:2:2 ratio(besan, sugar, ghee) you can use 1:1:1 ratio but it would not be that soft, (2)when ghee releases in the edges and colour becomes little pale you got to immediately transfer to greased tray, else delay will make mysore pak hard,
