Walnuts are very healty nut which has a lot of health benefits. It is rich in anti oxidant and provides healthy fats, fiber, vitamins and minerals. Hence we should try to consume a little amount of walnuts in our daily diet. We can simply eat 2-3 walnuts everyday or we can incorporate it to any of our dishes. This will not only increase the food value of our dish but also will enhance the taste. Here I am sharing a very delicious and healthy hara bhara kebab recipe with super food walnuts.

Ingredients

  1. 1 bunchfresh Spinach leaves
  2. 1 cupfresh green Peas
  3. 8-9Walnuts
  4. 1 teaspoonCumin seeds
  5. 1 tablespoonchopped Ginger
  6. 1 tablespoonchopped green Chillies
  7. 1 tablespoonOlive oil
  8. 1 teaspoonGaram Masala powder
  9. 1 teaspoonChat masala
  10. 1medium sized boiled Potato
  11. 1brown Bread
  12. 1/4 cup shredded Cheese
  13. handful Coriander leaves
  14. 1 teaspoonGhee
  15. to tasteSalt

Cooking Instructions

    Clean and wash spinach leaves properly. Then blanch them in boiling water for 2 minutes.

    Drain to a colander and rinse with cold water.

    Heat 1 tbsp of olive oil to a pan and temper with cumin seeds.

    Then add in chopped ginger and green chillies and saute for few seconds.

    Add in a handful of walnuts and green peas and stir for 2-3 minutes.

    Next add in wilted spinach, chat masala, garam masala and salt.

    Cover and cook for 5 minutes in low heat so that the mixture becomes soft.

    Kebab mixture is cooked now.

    When the mixture comes to room temperature, transfer to a grinder along with coriander leaves.

    Grind to a coarse paste.

    Boil a potato, peel and mash. Place everything to a mixing dish.

    Tear one piece of brown bread and add in to the mixture. Bread will help to soak any extra moisture from the spinach mixture and also will help to bind.

    Mix everything together. Also add in grated cheese.

    Mix again, kebab mixture is finally ready.

    From the mixture, take small portion,shape to make round and thin kebab. I used a mould to make the kebabs uniform.

    Roast them on both sides in medium low heat for 10-12 minutes using few drops ghee in a non-stick pan.

    Serve immediately with your favourite dip or sauce. I made a sauce using walnut, pumpkin seeds and cashew nuts.
