Ingredients

5-6 servings
  1. 1small piece elephant yam foot
  2. 1raw banana
  3. 1/2medium piece snakegourd
  4. 2medium carrots
  5. 3drumsticks
  6. 1/2medium sized raw mango optional
  7. 1 cupcurd
  8. as per taste Salt
  9. Few Curry Leaves (Curry Patta)
  10. 1 tbspcoconut oil
  11. 1garlic crushed
  12. For grind
  13. 1.5 cupcoconut grated
  14. 1/4 tspturmeric powder
  15. 1/2 tspjeera
  16. 4-5green chilles

Cooking Instructions

    Peel and cut all the veggies into long pieces (check the picture below)

    Heat a nonstick pan and put all d veggies sprinkle some water and close the lid n cook on low flame.
    Keep saueting in between and splash water whenever needed so that it doesnt get burnt.

    When the veggies are getting cooked grind the ingredients listed under 'to grind' adding 2 tbsp of water to a coarse paste

    When the veggies are 80% cooked add ground paste and salt then mix nicely and close the lid cook for 2mins.

    Now pour curd and give it a nice mix and swicth of the flame. Lastly pour coconut oil on top and throw in few curry leaves along with a garlic clove crushed and give it a final mix and close.allow it to sit for sometime before serving.

    Note: you can add sufficient water and cook the veggies if its time consuming but i like my veggies to retain the crunch and my aviyal to be dry.
    Adding mango is optional my curd was not sour so i added raw mango.
    Adding garlic is optional step but that enhances the flavor and dont add more than 1.
