Easy Galette-Style Fried Egg with Pancake Mix
I came up with this recipe since I got tired of the regular fried egg.

Cooking Instructions

Mix the pancake mix with water. Prepare the topping ingredients (this time I used spinach, mixed vegetables, bacon, and cheese).

Heat the olive oil in a frying pan. Spread the batter and let it run over the whole surface evenly to the edges. Stack the topping ingredients and make a shallow well in the middle.

Break an egg in the dent and season with salt and pepper. Cook over medium heat and cover with aluminium foil.

When it's almost cooked, fold the edges of the galette into the center to make a square.

When the egg white is cooked, slide to a plate and it's ready to serve!

Runny soft boiled egg.

I mixed the mashed simmered Kabocha squash (Recipe: 1859123) that I made the day before into the batter. It's got plenty of vegetables.
