Ingredients

  1. For CHILLI CON CARNE
  2. 500 gmince
  3. 1/2 teaspooncinnamon
  4. Dashcoriander powder
  5. Salt & pepper
  6. Grated carrot and half chopped red pepper
  7. 1onion chopped, garlic & chilli
  8. Tintomatoes
  9. Tinkidney beans or black beans (rinsed)
  10. For CORN BREAD
  11. 1 cupflour
  12. 1 cupmaize meal
  13. 1 cupmilk
  14. 1/4 cupolive oil
  15. 1/2 cupfinely chopped onion
  16. 1/2 cupgrated cheese
  17. 1egg beaten
  18. 2 tablespoonshoney
  19. 3 teaspoonsbicarbonate of soda
  20. 1/2 teaspoonsalt
  21. 1 tinsweet corn (plain not creamy)

Cooking Instructions

    CORN BREAD - heat oil add onion and sauté till soft

  2. 2

    Beat egg honey and milk together

  3. 3

    Mix flour, maize meal, baking powder & salt together

  4. 4

    Combine both mixtures and mix

  5. 5

    Add onions and corn and mix
    Spread into greased dish

  6. 6

    Bake for 30 minutes at 375/180 degrees

    CHILLI CON CARNE - Fry onions, add carrots and peppers and cook a few minutes. Then add mince, garlic, cinnamon, coriander & chilli and brown for approx 7-8 minutes.

    Add a tin tomato chopped/ blended. Add dash Worcester sauce, soy sauce and some chutney

  9. 9

    Cook for 45 min to an hour (the longer the better) and add bit of water if needed

    Add a tin red kidney beans or black beans and cook further 10 minutes

    When corn bread is ready, serve together with a salsa of smashed avocado, chopped onion and tomato with a bit of Tabasco sauce and lemon juice.
