I added some potatoes to give some texture and consistency to the soup. It can be substituted by masoor dal (red lentils) or oats. A dash of lime will enhance the taste and flavor. It can be relished as a light dinner with few bread sticks or bread croutons.

Ingredients

15-20 minutes
2-3 servings
  1. 2 cupscauliflower florets
  2. 1small potato, cubed
  3. As neededfew coriander
  4. 1onion, chopped
  5. 2garlic cloves, chopped
  6. as per tastesalt
  7. 1/2 tsp.pepper powder or to taste
  8. 1/2 tsp.turmeric powder
  9. 1/2 tsp.garam masala powder
  10. 1 tsp.coriander-cumin powder
  11. 2 tbsp.olive oil
  12. as per needfew kaffir lime leaves

Cooking Instructions

15-20 minutes

    Heat oil in a pan and sauté the onion and garlic till the onions turn translucent. Now add the cauliflower and potatoes and sauté for 2-3 minutes on low flame till they turn slightly light brown in colour.

    Add the salt, turmeric powder, pepper powder, coriander-cumin powder and garam masala powder and fry for a minute.

    Add 3 cups water, kaffir lime leaves and coriander leaves. Pressure cook for 3 whistles.

    When done, discard the kaffir lime leaves. Blend to a puree. Heat through and serve with some bread sticks.
