Ingredients

  • soup ingredients
  • 2 tbspextra virgin olive oil
  • 1onion, diced
  • 1/2 cupchopped celery
  • 5 1/2 cupvegetable or chicken broth
  • 5 tspcurry powder
  • 1/4 tsphot sauce
  • 1 lbred lentils
  • 1 bunchSwiss chard, middle stem removed, chopped leaves.
  • 1 1/2 cupor 1 can drained chick peas (garbanzo beans)
  • toppings/garnishes
  • 1cooked quinoa
  • 1plain yogurt

Steps

  1. 1

    In a large stock pot, saute onion in olive oil til soft.

  2. 2

    Add vegetable broth, seasonings, Swiss chard, lentils, and chick peas. Simmer til peas are soft.

  3. 3

    Top with a dollop of yogurt and a spoonful of warm quinoa - yum!
