Ingredients

20 minutes
4 servings
  1. 4-6large garden fresh potatoes (purple, red) are my preference
  2. 1sweet onion chopped
  3. 2 tbspolive oil or lemon olive oil
  4. 2pinch’s sea salt & black pepper
  5. 2pinch’s of fresh chopped rosemary
  6. 3-5 leavesfresh chopped basil
  7. 1/2 cuppancetta or bacon cooked add in to heat.. (optional)
  8. 1 tbspbutter
  9. 10-15grape tomatoes

Cooking Instructions

20 minutes

    Get your best pan like a cast iron or staub pan.. put in olive oil heat on med/ med high

  2. 2

    Put in potatoes, onions, mix in oil add seasoning and salt and pepper.. rosemary. Be generous.. add rosemary.. cook for 10 minutes.. potatoes should start to crisp

  3. 3

    Add butter and tomatoes.. turn down to 4 on stove cook another 7 minutes… add basil.. continue to stir.
