Ingredients

  1. 1 cupmaida (all-purpose flour)
  2. 1/2 cupsugar
  3. 1 pinchsalt
  4. 2 tbspbutter
  5. 1/2 cupoil
  6. 1/4th cup milk
  7. 1 tbspthick cream
  8. 2carrots grated
  9. 7-8dates deseeded and chopped
  10. 10-12cashewnuts
  11. 7-8almonds
  12. 1 tbspraisins
  13. 1 tspbaking powder
  14. 1 sachetEno Fruit Salt
  15. 1/4 tsp cinnamon powder
  16. For caramel syrup :
  17. 2 tbspsugar
  18. 1/4 cup cup hot water

Cooking Instructions

    Heat sugar in a pan to caramelize.When the sugar gets a rich brown texture,pour boiling water over it and boil till the sugar is dissolved. Set aside to cool.Sift flour,baking powder and pinch of salt and pass it through a seive.

    Mix carrots,dates,nuts and raisins with 1 tbsp flour.Shake off or seive excess flour.Mix powdered sugar,oil and soft butter. Add eggs, milk and cream and blend all well in a blender. Add cinnamon powder and essence of vanilla. Blend to get a smooth texture.

    Pour this blended mixture in the sifted maida.Add grated carrots,chopped dates,nuts and raisins.Mix all contents well.Add some more milk if the batter is thick..Now add Eno Fruit Salt and give it a mix.This makes the cake soft and fluffy.The batter for cake is ready.Line a greased cake tin with parchment paper and pour batter in it.Preheat oven to 180°C for 10 minutes and bake it for 40 -45 minutes.

    Insert a skewer or toothpick into the centre of the cake and check whether it comes out clean.If not bake for few more minutes. Cool and remove the parchment paper. Slice and serve it with a cup of hot coffee or tea,or pack it in kid's tiffin or enjoy as an aftermeal dessert with a dollop of ice cream.
