Lemon drizzle cupcakes

Ingredients

  1. 3/4 csugar
  2. 5 tbspbutter (room temp)
  3. 3eggs (room temp)
  4. 3/4 cricotta cheese
  5. 2 tbsplemon zest (4 lemons)
  6. 2 tbsp(plus extra) lemon juice
  7. 1 tspvanilla
  8. 1 1/2 cflour (self raising)
  9. 2 cupsblueberries (optional)

Cooking Instructions

  1. 1

    Cream sugar and butter until light and fluffy

  2. 2

    Add eggs one at a time

  3. 3

    Add vanilla 2 tbsp lemon juice and 2 tbsp zest

  4. 4

    Fold in the flour and blueberries if using

  5. 5

    Put into cupcakes (or loaf pan)

  6. 6

    Bake in oven 175/180 until toothpick inserted comes out clean

  7. 7

    Once out of oven drizzle with lemon sugar topping
