Lima beans (butter beans) are a delicious and healthy way to get protein and fiber in one dish. Adding greens makes it even better! Instead of soaking the beans overnight I prefer the 1-hour "quick soak" method. The prep work can be done easily at the same time.

Ingredients

3-4 servings
  1. QUICK SOAK: Pick over the beans, rinse. In a large pot, cover 1 cup of beans with 4 cups of water and 1/2 tsp baking soda. Boil for 2 minutes, remove from heat, cover and set aside for 1 hour
  2. 1 Tbspolive oil
  3. 1 cupsoaked beans
  4. 1/2onion, chopped
  5. 4-5 clovesgarlic, chopped
  6. 1bay leaf
  7. 1/2 tspcelery salt (or a pinch of celery seed)
  8. black pepper or red pepper flakes to taste
  9. 3 cupswater (or chicken stock, veggie stock)
  10. 1 cupcooked ham, diced
  11. large handfuls of fresh greens, torn into pieces if needed
  12. salt to taste

Cooking Instructions

    In a large pot, saute the onion and garlic in olive oil for a few minutes.

    Add the soaked beans, water or stock, bay leaf, celery salt and pepper. Mix well.

    Bring to a gentle boil, cover with the lid off-center, and cook over low heat for 1-1/2 to 2 hours, depending on how you like them. Stir occasionally. You may need to add more water.

    During the last 10 minutes of cooking, add the ham and greens.
    Mix well - add salt to taste. Serves 3-4. Recipe can be doubled.
