Cooking Instructions

Cleash, wash and pat dry the mutton chops and keep it aside. Now peel, wash and finely chop the onions. Heat up oil in a pan then add the sliced onions and fry them. Sprinkle some salt on it to fasten the caramelization process. Fry it till golden brown and crispy. Once done take it out on a plate and allow it to cool down. Then grind it to a smooth paste.

Heat the same oil again and when heated add all the whole spices. When they start to release their oil and aroma then add the washed mutton chops to it and cook it till the water dries out completely then add the ginger and garlic paste along with salt and mix it and saute it. When the rawness of the ginger and garl7c goes away then add all the other powdered spices and cook till the oil oozes out.

Once the oil starts to release then beat the yoghurt to make it smooth and add to the meat slowly on a low flame so that it could not curdle. Mix well and stir continuously when all the mix comes to a boil. Then add water to it as required or as thick or thin as you want your gravy to be. Then put the flame on high and allow it to boil then cover it and cook it on a low flame until completely done or transfer it to a pressure cooker and cook to make the cooking process easy.

Once done allow it to cool down a bit and garnish it with some chopped coriander leaves and serve hot with the choice of your bread and rice.
