Chicken shawarma is a middle eastern famous delicacy made with roasted or grilled boneless chicken with some sauces some veggies and wrapped up in a pita bread or tortilla bread.

Wash and pat dry the chicken thoroughly and cut it into half inch thick slices and keep it aside. Now in a big bowl add the yoghurt and beat it to make it smooth then add oil to it and mix very well until well incorporated. You can use any oil but olive oil boost and enhance the taste. Then add ginger and garlic paste and all the powdered spices and give it a good mix and the marinade is ready.

Now put the chicken pieces in it and coat it with the marinade from all the side make sure the marinade covers all the part of each slices. Once coated well from all over cover it and marinate it for at least 2-3 hours but I prefer overnight marination. Once the marination is done then preheat the oven at 200°C for 20 minutes. Meanwhile start assembling the chicken slices for that line up the baking tray with aluminium foil and grease it.

Now cut one potato in half and put the skewer in the middle of the potato. By the way if you are using bamboo skewers then soak it in water for 3-4 hours then use by this it will not burn. Now take pieces of chicken and start putting it in the skewers one by one over the potatoes in both the skewers. Don't put extra marinade on the chicken pieces. Then brush it with oil and grill or bake it at 200°C for 1 hour or until completely done.

I use to cut the potatoes just like french fries and coat it in the left over marinade and spread it on the baking tray and cook it along with the chicken. Once done take it out cool it down a bit then start shredding it from all the sides upside-down just like done in the restaurants. Then take a pita bread either homemade or store bought or even a tortilla cut it in half and then open it. It will look just like a pocket then add mayonnaise in it followed by shredded chicken.

Then some salad then sauces again some chicken and sauces. You can use salad of your choice and assemble the way you want. You can even put all the things in the pita bread and roll it also.
