Hot and sour is an Indo Chinese style soup which is spicy and a little sour. Spring onion, carrot, green beans, capsicum, cabbage etc vegetables are used to prepare this soup. Ingredients

  1. 1 tbspoil
  2. 1 tspginger finely chopped
  3. 1 tspgarlic finely chopped
  4. 1 tspgreen chillies finely chopped
  5. 1/4 cuponion finely chopped
  6. 1/4 cupspring onion white finely chopped
  7. 1/4 cupcarrot finely chopped
  8. 1/4 cupgreen beans finely chopped
  9. 1/4 cupcapsicum finely chopped
  10. 1/4 cupcabbage finely chopped
  11. 1/2 tspblack pepper powder
  12. 1 tbspdark soy sauce
  13. 1 tbspvinegar
  14. 1 tbspchilli sauce
  15. Salt to taste
  16. 1vegetable stock cube (optional)
  17. 5 cupwater
  18. 2 tbspcorn flour
  19. 2 tbspwater
  20. 2 tbspspring onion green finely chopped

Cooking Instructions

    Heat oil in a pan and add ginger, garlic, green chilli, onion and spring onion to it and saute it on high heat for a minute. Now add all the other remaining vegetables to it and saute it again for a minute. Now add black pepper powder, soya sauce, vinegar, chilli sauce, salt and a stock cube to it and mix everything well.

    Now add water and let it boil. (If you do not want to use a stock cube, you can use vegetable stock or normal water). Now mix cornflour and water to make a slurry. Now add the slurry to the boiling soup and mix it well. Cook the soup for 5 to 7 minutes on medium heat. When it gets a little thick, turn off the heat. You can adjust the consistency of the soup by increasing or decreasing the amount of corn flour.

    Serve hot and sour soup garnished with spring onion.
