Mike's Chinese Hot And Sour Soup

It's, "Leftover Night," here in the O'Brien Shire so, ya'll know what that means?! Dealer's choice!

I swear, my students literally ran happily amuck knowing they were not only making, but delivering and serving their very own piping hot finished soups to two of our largest Albuquerque homeless shelters early this morning! As usual, they were all so stinkin' enthusiastic and excited! Kids huh?! 😉 God love em'!

Anywho, my students would eventually decide upon various traditional homemade soups. Mostly stews and chicken noodle. Or, dumpling dishes. Always a great idea. But, one of my 7 year old students decided to get their Asian on and go altogether Ninja rogue on their asses last night! [it's kinda funny seeing as how he's so very, VERY Jewish?] 🤔

Anyway, not many Americans are aware of the true origins of traditional Chinese Hot & Sour Soup. This specific soup was initially created out of absolute necessity. Early on, it consisted ONLY of older Chinese kitchen table scraps. And, not the good kind either folks! [you know, like the iced cold moo goo we feed off of at 2:00 am flat assed drunk but always seem to somehow really appreciate?] Yup, you remember. I know you do. ;0)

Hence the prompt additions of rice wine vinegar, soy and sugars to mask any [how shall we say] more curious flavors? Even the Chow Mein Noodles were old, dusty and leftover. Yup, it was all a grand, delicious cover up! That's right, everybody in the pool! Old or new - didn't matter!

  1. ● For The Hot & Sour Soup
  2. 5 CupsChicken Or Beef Stock
  3. 1 1/2 CupsPrecooked Shreaded Chicken, Beef Or Pork [packed]
  4. 1/4 CupBamboo Shoots [drained - thin sliced]
  5. 1/4 CupWater Chestnuts [drained - minced]
  6. 1/4 CupShiitake Mushrooms [small chop - or, white & brown]
  7. 6 ozFirm Tofu [1/2" chop]
  8. 2 tspFine Minced Fresh Ginger
  9. 1[or 2 - your call] LG Eggs [beaten]
  10. 2 tbspRice Wine Vinegar
  11. 1 1/2 tbspSriracha Chile Sauce
  12. 3 tbspSoy Sauce
  13. 1 tbspBrown Sugar
  14. 1 tspSesame Seed Oil
  15. 1/4 tspChinese 5 Spice
  16. 1/2 tspRed Pepper Flakes
  17. ● For The Thickener
  18. 2 tbspCorn Starch + 2 tbs Water [more if you want her more viscous]
  19. ● For The Sides & Garnishments
  20. as neededFresh Chives [minced]
  21. as neededFresh Cilantro Leaves
  22. as neededThai Chilies [fine minced - optional]
  23. as neededCrispy Chow Mein Noodles
  24. as neededSoy Sauce
  25. as neededChile Sauce
  26. ● For The Options
  27. 1/8 CupDried Roasted Nori [aka dried seaweed - rough chopped]

  1. 1

    Chop your veggies. Heat everything in the Hot & Sour Soup section for 20 minutes. Stir regularly. At 20 minutes in, add your whisked egg[s] and stir constantly until eggs are fully cooked. Then, while soup is at a steady simmer, add your corn starch and water mixture slowly. She'll thicken up quickly as she bubbles away. Add more corn starch and water if you'd like her a bit thicker. ● P.S., this is the actual color of soup below. The kiddos somehow ended up taking darker faced photos upon down lighting with the other pictures.

    Brown, white, oyster or Shiitake mushrooms really do make this dish! Your choice! Just dice!

    For The Sides & Garnishments. Thai Chilies, fresh Cilantro leaves and chopped Chives.

    Serve Hot & Sour Soup with the fresh garnishments listed. Especially the fresh Cilantro. It really does make the dish! Serve soup piping hot with fresh, crunchy Chow Mein Noodles and Soy Sauce. Enjoy!
