Jalapeno Cornbread Waffle

Ingredients

  1. 1 1/2 ccoconut milk or any other non-dairy milk
  2. 2 teaspoonsapple cider vinegar
  3. As required olive oil
  4. 2 tablespoonsMaple syrup
  5. 1 cupJowar flour
  6. 1 cupAll-purpose flour
  7. 1 teaspoonBaking powder
  8. 1 teaspoonflax seed
  9. 1/2 teaspoonHimalayan pink salt
  10. 1/2 teaspooncumin powder
  11. 1/2 teaspoonchili powder
  12. 2Jalapeno pepper seeded, Chopped finely
  13. 1/2 cgreen peas, frozen or fresh
  14. 1 tablespoongarlic chives. chopped finely
  15. salt to taste

    Make a checklist, keep ingredients within reach.
    soak falx seeds in 2tbsp water for 10 minutes. It is your egg substitute.

    .In a large bowl Combine the coconut milk, maple syrup, olive oil and the apple cider vinegar and the flax. mix well and set aside. In a large bowl, combine flours, salt, baking powder, cumin, and paprika/chili powder and thoroughly mix..Keep a wire basket or sieve over the bowl with wet ingredients. Transfer the flour mix to the sieve. Shake, add the flour mix little by little to the wet ingredient, whisk to mix. Avoid lumping by whisking. Fold in jalapeno, peas and chives.

    Rest the batter for 15 minutes. while batter is resting
    preheat the waffle maker. Using a brush grease the waffle maker. Follow manufacturer's instructions for using the waffle maker. Add about 1/2c batter and spread. spray oil over the waffle. Close the lid. You will see steam coming out of the waffle maker. Do not open.

    .After 5 or 10 minutes open the waffle maker. Waffle should be ready. Lift it up and transfer to a plate
    you may garnish with chopped jalapeno and chives. Serve with whipped cream or yogurt.
