Healthy Meatloaf

I often make this meatloaf when I’m pressed for time and I want to make something healthy and delicious for the week.
Using 93% lean ground turkey has less saturated fat than other meat choices. But because it’s lean, adding moisture in the form of other ingredients is necessary to obtain a moist meatloaf. It’s a great opportunity to add vegetables (and even an apple!) to increase nutritional value.

Assemble the ingredients.

In a small bowl, combine the 2 tablespoons of milk with the half cup of breadcrumbs. Set aside for a few minutes while you prepare the other ingredients.

Preheat the oven to 350°F.

Peel the carrots and the apple, then shred them.
Finely chop the onion. - 5
In a large bowl, whisk the egg.

Mince the garlic.
Transfer the carrots, onion, apple, and garlic to the bowl with the egg.
Also, add the ketchup, quick oats, salt, pepper, and the soaked breadcrumbs.
Mix everything well. - 7
In another small bowl, combine the ingredients for the glaze: ketchup, quick oats, brown sugar, and the ground mustard. Stir until well combined.

Line a 9 x 13“ pan with aluminum foil, and lightly grease with cooking spray.

Gently fold the ground turkey into the prepared ingredients.

Transfer the meat mixture to the prepared 9 x 13 pan. Gently pressed the meat mixture into the shape of a loaf.

Spread the glaze on top of the meatloaf, then drizzle additional ketchup over the top, if you like.

Bake in the preheated 350°F oven for approximately one hour. Check for doneness and cook for a little longer if necessary. Allow to cool for at least 20 minutes before attempting to slice it.

Notes:
You can replace the shredded carrots and apple with other ingredients, if you choose. Shredded zucchini or yellow squash can be used, as well as chopped mushrooms.
