Ingredients

  1. 1/3 cuprice vinegar
  2. 4 tablespoonssweet chili sauce
  3. 2 teaspoonsoy sauce
  4. 1 teaspooncrushed red pepper
  5. juice of one lime
  6. 1medium green papaya (4½ cups shredded green papaya)
  7. 2 cupscarrots, peeled and julienned
  8. 1 cupEnglish or Persian cucumbers, julienned or cut thinly in quarters
  9. 1/3 cuploosely packed mint leave, chopped
  10. 4 tablespoonscrushed roasted peanuts

Cooking Instructions

    PREPARE THE DRESSING
    Mix all the ingredients for the dressing in a small bowl and set aside.

    PREPARE THE SALAD
    Slice off the ends of the green papaya. Using a vegetable peeler, peel the outer skin. Using a julienne peeler or spiralizer, shred the raw papaya.
    Shred the peeled carrots and cucumbers.

    MIX THE SALAD
    In a large bowl, mix the green papaya, carrots, cucumber and mint. Pour in the dressing and toss to coat the vegetables with the dressing. Top with crushed peanuts. Serve immediately.
