Ingredients

  1. 1 1/2 cupgreen papaya, julienned and soaked in cold water to keep firm
  2. 1 cupcherry tomatoes, cut into halves
  3. 1/4 cuproasted peanuts
  4. Cilantro leaves (optional)
  5. Dressing
  6. 2gloves garlic, minced
  7. 1-2green or red chillies
  8. 4 tbsppalm sugar, diced
  9. 2 tbspdried shrimps, diced
  10. 6 tbspfresh lime juice
  11. 2 1/2 tbsptamarind juice
  12. 4 tbspfish sauce

Cooking Instructions

  1. 1

    In a mortar and pestle, pound the garlic and chillies until the garlic is slightly bruised. Then add the palm sugar, dried shrimp and half of the peanuts. Mash all together.

    Add the lime juice, tamarind juice and fish sauce. By this time make sure the palm sugar if already dissolved into the dressings.

    In a bawl, combine the dressing with the green papaya and tomatoes. Top with the remaining peanuts and some cilantro.
