Cooking Instructions

Cut the carrot and onion into thin slices. In a mixing bowl add curd whisk well. Add cucumber and onion slices.

Add all spices and soaked chia seeds. Mix all very well. Add coriander leaves mix all well.
- 3
Take a tempering pan, add butter when it started melting add cumin seeds and mustard seeds. When they start splutter add curry leaves.

Pour this tempering in salad bowl. Mix it. Enjoy the healthy and refreshing salad

My daughter was 3 and hooked to Disney Movies, especially those which had Princesses as prominent charecters, Ariel from The Little Mermaid and Belle from Beauty and The Beast were her hot favourites. So of course, she tried to copy their dialogues, their looks and generally idolised them. This might not sound very politically correct in today's times, but am talking of nearly 18 years ago and man, she really worshipped those animated divas on the screen! So, while I used to struggle to get nutritious, wholesome meals down her tummy at every meal, I hit upon the idea of telling her that if she ate beetroot, she would get red, rosy cheeks like all those cartoon Princesses she loved so much, and to my sheer joy and wonder, this beetroot salad is something she developed a fondness for and I did not have to then make any effort to get her to finish that portion of the meal from her plate, ever! She has long since outgrown her Disney fixation, she now has real, strong and motivating women as her role models, but continues to never ever say no to beetroot till this day :) That's the story behind the name for this simple, healthy salad !
