High protein, gluten free summer recipe Rajgira Paneer paratha is a nutritious and wholesome food made from rajgira or amaranth flour and paneer ( cottage cheese). Also referred to as Royal Grain, Amaranth is often consumed during fasts.
Cooking Instructions
- 1
In a bowl add all the ingredients and knead a soft dough. Add water if needed.

Dovide the dough in 4 equal parts and roll roll each into round thick paratha.
- 3
Add rajgira flour of needed for rolling.
Cook on a girdle/tawa with ghee or oil from both sides till golden brown. - 4
Serve with fresh green chutney and curd.
