Here I have prepared paneer bhurji gravy or curry base recipe. It is served with pav, roti or paratha. It is referred as vegetarian alternative to the popular egg bhurji gravy.

Here I have prepared paneer bhurji gravy or curry base recipe. It is served with pav, roti or paratha. It is referred as vegetarian alternative to the popular egg bhurji gravy.
Cooking Instructions

For paneer bhurji, heat a kadai and add butter. Then add cumin seeds, bay leaf, asafoetida and ginger garlic paste. Saute for a minute.

Then add chopped onion and cook it for 3-4 minutes. Then add turmeric, red chilli powder, coriander powder, cumin powder, garam masala and salt. Mix it.

Now add chopped tomatoes. Cover it and cook it for 3 minutes.

Then mix it well. Add water half a cup of water and boil it. Then add paneer and boiled green peas into the gravy. Boil it for 2 minutes. (Green peas are optional)

Now add coriander leaves, kasuri methi and cheese. Paneer bhurji is ready to serve.

For paratha: Take a mixing bowl and transfer flour. Add roasted cumin seeds, salt and oil. Crumble the flour with hands.

Add water and start kneading dough. Make a semi-soft dough. Make a small ball sized portion.

Roll the paratha. Heat a tawa and place a paratha. Bubbles up on upper side flip it and apply oil.

Flip the side and apply oil. Cook it light golden.

For rose shape, with the help of knife cut the paratha from the centre in spiral shape.

Then pick the edge of centre and start rotating in a circular motion towards the end. Rose paratha are ready. Enjoy with paneer bhurji.
