Rajgira paratha is so healthy and gluten free and made out from amaranth flour or rajgira flour. Generally these Paratha are prepared during fasting. You can also consume it in normal days. As they are gluten free, so rolling of the Paratha is so difficult than normal wheat flour Paratha. So the addition of boiled potatoes and paneer act as binding agent.

Ingredients

  1. 1.5 cupamaranth/rajgira flour
  2. 2medium sized boiled potatoes
  3. 1/4 cuppaneer
  4. 1/4 tspsalt
  5. 1/2 tspchilli powder
  6. 1/4 tspcumin powder
  7. 1/4 tspgrated ginger
  8. 2red /green chilli finely chopped
  9. 3 tspchopped coriander leaves
  10. 1/4 tspdry mango powder
  11. 2 tspmelted ghee
  12. as neededWater for kneading the dough
  13. as neededGhee for making parathas

Cooking Instructions

    Grate the boiled potato and paneer.

    Then add all the spices in it and mix it well.

    Then add the rajgira flour in it along with ghee.

    Mix it gently and knead it. Then add required amount water in it to make a smooth dough. Cover it and Keep it aside for 10 minutes. Then make equal parts of the dough.

    Dust the rolling board with some flour and roll the ball in chapatti shape.

    Heat a tawa and place the Paratha on it. When one side is cooked, then flip the other side and then add ghee in it. Cook both the sides till they become golden brown in colour.

    Now your paneer rajgira paratha is ready. Serve hot with sweet or masala curd.
