Jamun infused Quinoa and Mango Salad

Doesn't this salad just look so amazingly beautiful! The secret is in the salad dressing; lemon juice, coconut oil, ginger, salt and jamun compote! That really is all it takes for this yumminess to happen.
The slightly tangy dressing complimented the ripe mango perfectly with bits of parsley peeking through in each mouthful!
I added cucumber as well which added to it refreshing taste. This was surprisingly filling as I had it for lunch. Quinoa is packed with protein, perfect for vegetarians like me!

Cooking Instructions

Boil 1/4 cup of quinoa in 3/4 cup water. When water is absorbed, it should be done. Allow to cool.

Peel and dice mango and dice cucumber and chill until ready.

To make salad dressing, combine lemon juice, coconut oil, ginger, salt and juice from jamun compote. Mix well.

Add salad dressing into quinoa and mix well.

Add in chilled mango and cucumber and combine to coat.

Garnish with parsley.
